Brazilian Pudim de Leite Condensado Recipe
Here's a traditional Brazilian flan recipe.
With each recipe, we recommend you read the instructions thoroughly before you begin, and be sure to note our recipe tips as well.
Ingredients:
1 cup of sugar 7 ounces (3/4 cup + 2 tablespoons) milk 4 eggs 14 ounces sweetened condensed milk Hot water for the baking/roasting pan

Kitchen Tools:
Fry pan or skillet and stirring spoon Two baking pans, one smaller than the other (such as a pie pan and roasting pan) Blender Small knife

Time:

About 1 hour to prepare and cook, 1 hour to cool |
To prepare the baking pan:
- Preheat oven to 350F
- Place the fry pan on the stove over medium heat
- Pour in 1 cup of sugar and stir until it browns to liquid caramel
- Pour the caramel into the pie pan
- Tilt and swirl the dish until the caramel coats the sides and the bottom
- Set aside to cool
To prepare the mix:
- Crack and separate the eggs for the moment
- Place the yolks into a blender
- Add 14 ounces of sweetened condensed milk
- Blend well
- Add 7 ounces of milk and continue to blend thoroughly
- Add the egg whites and blend until smooth
- Pour the mix into the caramel coated pie pan
- Cover with aluminum foil
To cook:
- Wet a kitchen towel and place it at the bottom of the larger baking/roasting pan
- Place the baking pan on the oven rack
- Place the pie pan inside it
- Carefully pour hot water into the baking pan so it creates a water bath about 1/2 way up around the outside of the pie pan
- Cook for 45 minutes
- Lift the foil and place a small knife in and out near the center, when it comes up clean it's done
- Carefully remove the baking pan from the oven
To cool:
- Take out the pie pan and set it aside to cool for 15 minutes
- Then place it in the refrigerator for at least 45 minutes
To serve:
- Remove the foil
- Slide a knife around the inside wall of the pan to loosen the flan from the dish
- Place a large plate upside down covering the pan, then flip the pan and plate over together so the pan is upside-down on top of the plate
- Lift the pan and serve
