Costa Rican Flan Recipe
Here's a Costa Rican Flan recipe.

Ingredients:
1-1/4 cups sugar 7 eggs (3 yolks, 4 whole eggs) 1/2 teaspoon of corn starch 1 tablespoon of vanilla 4 cups milk 1 pinch of salt 1 tablespoon water + hot water for the larger baking/roasting pan

Kitchen Tools:
Fry pan or skillet and stirring spoon Two baking pans, one large enough to hold the other (such as a pie pan and roasting pan) Sauce pan Mixing bowl Whisk or mixer Aluminum foil Small knife & large serving plate |

About 1 hour and 30 minutes to prepare and cook, 1 hour to cool |
To prepare the baking pan:
- Preheat the oven to 350F
- Place the fry pan on the stove over medium heat
- Pour in a 3/4 cup of sugar
- Stir continuously until it turns to a medium brown liquid caramel
- Pour the caramel into the pie pan
- Swirl and tilt the pan to coat the sides and bottom with caramel, then set aside
To prepare the mix
- In a sauce pan on the stove, combine the remaining 1/2 cup sugar, 4 cups milk, pinch of salt and tablespoon of vanilla
- Blend well and bring to a boil
- Lower the heat to simmer (uncovered) until the mixture is condensed down to about half
- Turn off the heat and then cover the pan to keep the contents warm
- In a mixing bowl, pour in the 1/2 teaspoon cornstarch and tablespoon of water and mix well
- Crack and separate 3 eggs and put the yolks in the bowl
- Add the remaining 4 whole eggs and whisk or mix thoroughly
- Open the covered sauce pan
- Pour the egg mix slowly into the sauce pan while stirring to blend in well
- Pour combined mix into the caramel coated pie pan
- Cover with aluminum foil
To cook:
- Place the pie pan into the baking/roasting pan
- Carefully pour hot water into the baking pan so it provides a 1-2 inch water bath around the outside of the pie pan
- Place baking pan in the oven
- Cook for 35-40 minutes
- To check for readiness, lift the foil and slide a knife in and out near the center, if it comes out clean the flan is done
- Remove the pan from the oven
To cool:
- Place the flan pan on the counter to cool for 15 minutes
- Then place it in the refrigerator for at least 45 minutes
To serve:
- Slide a knife around the inside wall of the pie pan to loosen the flan from the sides
- Place a large plate upside down on top of the baking dish and then flip them both over so the pie pan is upside-down over of the plate
- Remove the pie pan and enjoy
